The Truffle
The truffle is the king of the typical products here in the Sibillini Mountain area. It can be found in its various types throughout the year:
- The prestigious white truffle (Tuber Magnatum Picum) is the most prized. It is found from October to December.
- The prestigious black truffle (Tuber Melanosporum Vittadini) is found from December to March.
- The summer scorzone (Tuber Aestivum Vittadini) is found from May to October.
- The autumn scorzone (Tuber Uncinatum Chatin) is found from October to December.
- The bianchetto tartufo (Tuber Borchii Vittadini or Tuber Albidum Pico) is found from December to April.
Other typical products:
- mushrooms, in particular, porcini mushrooms
- the mela rosa (pink apple) with its special quality of long shelf-life: www.melerosasibillini.it and www.lespiazzette.it
- beans such as the lentils of Castelluccio
- cheeses and, in particular, the pecorino of the Sibillini Mountains
- cured meats, especially ciauscolo and coppa
- mistrà, a distilled wine flavoured with anise
- vino cotto – cooked wine
